Due to the complex technology of beer brewing, how to improve the intelligence and stability of beer brewing is a very practical research topic. In July 2018, under the title of intelligent transformation of laboratory brewing equipment and temperature control, we applied for the approval of the Ministry of Education's collaborative education project Digital Factory for Beer Brewing Process Control.

Temperature control during saccharification and fermentation is the most critical step in determining beer quality during beer brewing. Temperature control during malt saccharification and wort fermentation has characteristics such as non-linearity, time lag, and large inertia. Realizing precise control of step temperature has always been one of the difficult problems in the field of automatic control. Therefore, researching beer saccharification and fermentation process control algorithms and improving the intelligent control are effective measures for the technological progress of the brewing industry. It can improve product quality and stability, while substantially reducing labor intensity, improving fermentation process and production management level.

This project is mainly to improve the intelligence of traditional beer brewing equipment. Aspen Hysys is used to build a mechanism model of beer brewing process, optimize model parameters and structure, and provide decision-making reference for the actual brewing process. Combined with the flow valve, a control algorithm based on fuzzy logic is proposed to accurately and quickly control the step temperature during saccharification and fermentation.
Therefore, the research objectives of this project mainly include the following three aspects:
Initial use of simulation software establishment of the mechanism model of saccharification / fermentation system
Design of fuzzy logic rules for temperature process curve and hardware
Preliminary realization of digital plant model for beer brewing equipment
